I used to do a lot of searching on, about.com and came across this recipe. I found a small bag in the local health food store and bought some. I was looking for something to eat in the morning that was quick and easy.
I used to eat toast with coffee in the morning. By using my meter I found the toast spiked my blood sugar and I quit drinking coffee, because I liked my coffee with sugar in it.
Right after being diagnosed I started to eat oatmeal instead of coffee and toast. When my blood sugar didn’t like the oatmeal either, I decided to give the TVP oatmeal a try. It spiked my blood sugar a lot less than anything else I tried, so I ate it for several months. After awhile I started to get tried of the TVP oatmeal and started to look for other ways to use it.
I got a great deal on it from bulkfoods.com. Only thing, I had to purchase 25 pounds of it. If you search the web, everything I found used it as a meat substitute. That wasn’t what I was looking for, so I modified a recipe I found online for carrot cake. I replaced the sugar with splenda and I ground the TVP in a blender to get it as fine as I could. I used the ground TVP in place of the flour. The cake came out pretty good. I ate the TVP carrot cake for several months.
Then I modified another recipe for chocolate cake and have been eating TVP chocolate cake for a while now. I have been eating TVP since last April and still got about 10 lbs left.
