1 ½ cups soy flour
1 teaspoon salt
3 tablespoons splenda
2 teaspoons double acting baking powder
3 tablespoons melted butter
1 ¼ cups walnut milk
Sift soy flour before measuring.
Resift with salt, splenda & Baking powder
Beat eggs then add milk and melted butter. Mix.
Add liquid to dry ingredients and mix. Add more milk if needed.
Cook pancakes on griddle or fry pan

I recently have been adding 1-cup nut pulp leftover from making nut milk. It’s hard to believe there so good and don’t spike my blood sugar. I eat them plain or sometimes I put a small amount of sugar free maple syrup or sugar free grape or blackberry jam.
The serving size is a bit small. I don’t think I could eat just one. But 2-3 pancakes make a pretty good serving. I was making them small like the recipe said but the other day I started making them bigger. Was getting tired of spending all the time cooking them. I found that making them bigger I was able to get them all cooked a lot faster. Two pancakes of the bigger size makes a good serving.
I found using a no-stick cooking spray worked out pretty good and didn’t have any problem with them sticking to the pan.
